Method of Preparation

  1. Mix together all of the ingredients in a mixer fitted with the whip or paddle attachment.
  2. Mix at medium speed for 2 minutes.
  3. Pour batter into cake pans that have been sprayed and lined with parchment paper.
  4. Bake at 338°F (170°C) for 15-20 minutes.

Method of Preparation

  1. In a mixing bowl fitted with a whip attachment, add sugar and water.
  2. Whip until sugar is dissolved.
  3. Add and whip until stiff peaks are obtained.
  4. Soften butter in a mixer using a paddle.
  5. Add butter to Meringue in small additions while mixing on low speed.

Method of Preparation

  1. Combine the PreGel and water #1 in the bowl of a stand mixer. Whisk well to combine and set aside to hydrate.
  2. Combine water #2, sugar and glucose in a saucepan and bring to a boil.
  3. Pour the boiling liquid over the hydrated PreGel Fiordica Gel Evolution and whisk by hand until the PreGel Fiordica Gel Evolution is fully dissolved. Place on the mixer and whip on high speed until full volume is achieved and the mix is cooled completely.
  4. While using gloves, stretch the marshmallow around the cake to resemble a spider web.

Final Assembly

  1. Level each layer of cake by trimming off the top.
  2. Start with a layer of cake and place an even layer of buttercream on top.
  3. Alternate these layers until the cake is complete and finish the outside with a thin layer of buttercream.
  4. Chill for at least 30 minutes and then use the marshmallow to decorate the cake with a “spider web”.
