Confit Roasted Pears

Method of Preparation

  1. Bring the water and sugar to a boil, then lower to a simmer.
  2. Peel and core pears and submerge in syrup.
  3. Cook on low, never going over a boil, for 4-5 hours or until pears begin to turn translucent.
  4. Remove from syrup and roast in over at 350°F until golden brown.
  5. Cut in half and slice to desired shape.
  6. Fan out in tart shell.

Pear Sherbet

400g (14.1oz)

180g (6.3oz)
120g (4.2oz)
80g (2.8oz)
10g (0.4oz)
6g (0.2oz)
100g (3.5oz)
800g (28.2oz)

Method of Preparation

  1. Combine all ingredients and cook to 85°C/185°F.
  2. Chill and allow to age in the refrigerator for 24 hours.
  3. Batch freeze.
  4. Pipe on top of pre filled tart shells.

  1. Prepare Confit Roasted Pears as instructed; fan into tart shell; store in freezer until Pear Sherbet is ready to use.
  2. Prepare Pear Sherbet; pipe on top of tart shell; garnish as desired.
